Blueberry Corn Pancakes

Ingredients

Makes 18

  • 1  16 oz. package corn muffin mix
  • 1 1/4  c  milk
  • 2  eggs
  • 1  c  blueberries

Preparation

In bowl, stir together corn muffin mix, milk and eggs just until blended. Fold in blueberries.

For each pancake, pour about 1/4 cup of batter into a lightly greased skillet. Cook 2 - 3 minutes on each side or until light brown.
